We sugar cure and salt a whole pork shoulder with the bone in then slow cook it for hours to get a golden caramel crust and serve it pulled with a selection of lettuce leaves, rice, a zingy ginger shallot sauce and our housemade kimchee plus extra chilli sauce because…some like it hot …wrap your own however you like it! Super delicious, light and healthy, and gluten free.
