We sugar cure and salt a whole pork shoulder with the bone in then slow cook it for hours to get a golden caramel crust and serve it pulled with a selection of lettuce leaves, rice, a zingy ginger shallot sauce and our housemade kimchee plus extra chilli sauce because…some like it hot …wrap your own however you like it!
